Ingredient List

  • Small check mark in a circle icon 1 teaspoon cinnamon
  • Small check mark in a circle icon 1/2 teaspoon salt
  • Small check mark in a circle icon 1/2 cup coconut oil
  • Small check mark in a circle icon 1/3 cup white sugar
  • Small check mark in a circle icon 1/3 cup light brown sugar
  • Small check mark in a circle icon 1 teaspoon vanilla extract
  • Small check mark in a circle icon 1 egg
Preparation
  1. Preheat the oven to 350 °F.
  2. In a food processor, process the Cheerios and pecans with the quinoa flour, cinnamon and salt.
  3. Add the coconut oil, the sugars, egg and vanilla. Process until a dough has formed. Transfer to a container and lightly knead the dough with your hands to form a ball.
  4. Use a spoon to scoop out dough balls. Arrange them, with space between each one, on a baking sheet lined with a silicone baking mat or parchment paper. Bake for 10-12 minutes, or until slightly golden brown. Let cool on the baking sheet before transferring to a cooling rack.
  5. Serve and enjoy!
