High blood cholesterol is a major risk factor for coronary heart disease. Heart disease is dependent on many factors, including diet, a family history of the disease, age, physical activity, tobacco use, and the presence of other risk factors, such as high blood pressure or high cholesterol levels. The amount of saturated fats in the diet has more potential to raise blood cholesterol than any other single dietary factor.

The average American consumes 270mg of cholesterol daily, while the recommended intake is less than 300 mg per day. According to the American Heart Association, 50% of all adult Americans have blood cholesterol levels higher than "desirable" (desirable = less than 200 mg/dl). One third of these people have levels that are considered "high" (high = 240 mg/dl or greater).
